Meatballs are so versatile. Serve them on their own with warm bread or your favorite pasta. Create meatball sandwiches for game day, or meatball sliders for your next dinner party. Here is a simple and delicious recipe that is sure to please anyone.
4 slices white bread. torn into small pieces
1 pound ground beef
1/2 pound ground pork
1/2 pound ground veal
4 large cloves garlic, crushed
1/3 cup grated Parmigiano Reggiano
1/3 cup chopped flat leaf parsley
1 teaspoon sea salt
1 1/2 teaspoon black pepper
4 large eggs, whisked together with 1 tablespoon milk
Preheat broiler to 400 degrees F. Put bread in large kitchen mixer bowl and lightly dampen with some milk. Add remaining ingredients. Mix until combined. Mixture should be moist, but not overly wet (adjust with extra milk or extra bread if needed).
Shape into preferred size meatballs and place on baking sheet. Brush top lightly with olive oil and broil for about 10 minutes, or until nicely browned. Flip the meatballs and broil another 7 to 10 minutes until nicely browned on other side. Remove and place on plate lined with paper towel to soak up excess olive oil.
