Tomato Sauce: Simple Recipe from Italy

A simple tomato sauce recipe is a staple in every kitchen.  It is a canvas that can be used on its own, or used as a base for other great sauces.  Here is a great recipe straight out of Italy that is simple to make.

Tomato Sauce

Makes 3 quarts


1 cup Olive Oil (Olio brand recommended)

12 cloves garlic (whole)

4 28oz cans whole peeled San Marzano Tomatoes (Carmelina brand recommended)

1/2 tsp Red Pepper Flakes

2 teaspoons fresh ground Sea Salt

4 teaspoons white sugar

To Make

Heat an enameled dutch oven (Le Creuset or similar) over medium heat for a few minutes.  Add olive oil and garlic to the pan.  Swirl for 5-10 minutes until garlic cloves are golden.  Remove from heat and add red pepper flakes.  Swirl for about 30 seconds.  Add tomatoes and return to heat.  Stir.  Bring to a simmer.  Add sea salt and sugar.  Leave uncovered and maintain simmer for about 1 hour, stirring occasionally.

Use handheld blender motor (Braun or similar) and insert into simmering sauce.  Blend for 1-2 minutes until smooth, or desired consistency level.  Cover and maintain simmer for about 1 hour more, stirring occasionally.

Taste and adjust any seasoning as needed.  The sauce should have a fresh tomato flavor, with a hint of sweet and spice.  It is great over any pasta on its own, or as a homemade pizza sauce.  Use it as a base for other italian sauces such as tomato basil, arrabiatta, four cheese, and tomato vodka cream sauce.  These recipes coming soon to the Sello Blog.
